Mint Oreo Ice Cream

Ice cream ranks at the top of the list of my favorite foods along with spaghetti and meatballs, cheetos, white nectarines, and Filet-O-Fish.  A Cuisinart ice cream maker has sat humbly in our family pantry for ages now, collecting only dust and the errant moth.  Inspired by a Ben & Jerry's "missionary" at my office who gives out free ice cream making books to anyone expressing interest, I chose to revive the little gadget.

2/3 cup chopped Oreo cookies
2 large eggs
3/4 cup sugar
2 cups heavy or whipping cream
1 cup milk
2 tsp peppermint extract
Green food coloring (optional)

The simple ingredients (sans oreo cookies)


Chop up the Oreo cookies and place in fridge while you make the ice cream.  You'll throw these in when the ice cream is almost done.

Whisk eggs in mixing bowl until light and fluffy (1-2 min).  Whisk in the sugar a little at a time until completely blended (1 min).  Pour in the cream and milk and whisk to blend.  Add peppermint and food coloring and blend again.

Pour mixture into ice cream maker and start churning.  When the ice cream stiffens (20 - 30 min), add the chopped cookies and churn until frozen.  Transfer into container for freezer storage or skip the dirty dishes and empty it straight into your tum tum.

 Perhaps you thought that a post to make your own magical ice cream would be longer and more complex, but alas, this is one of the easiest things to do!  Whodathunk it?  A few variations include adding chocolate chips, changing up the cookies, or adding your own meatballs!  The possibilities are endless.  Some are better than others. Choose wisely, my friend.
